Honey Cake (Medovník) a Slavic Tradition
Dough:
1 stick of butter
2 eggs
1 cup sugar
2 tablespoons honey
1 teaspoon baking soda
flour
little orange juice
Filling:
2 cups whipping cream
sugar to preferred taste
2-3 teaspoons lemon juice
vanilla
¼ cup chopped walnuts
Place butter, eggs, sugar and honey into a warm water bath and mix. Once smooth consistency, add baking soda and mix well again. Take off the heat and start adding flour little by little, until soft dough is formed. Divide dough in 10 pieces and roll each one into a thin pancake-like circle resembling a crepe. (since the dough sheet is so thin it may have holes in it and uneven edges and it is fine.) Bake each layer at 350 degrees F (it takes only a few minutes for each pancake to bake.) Once layers are cool, paint each one with a little orange juice using a brush.
Whip the whipping cream, add lemon juice, vanilla, and sugar to taste.
Spread cream on each layer and assemble the cake. Finish by sprinkling chopped walnuts over the cream on the top layer of the cake.
