Lecho (Lečo)

a quick and healthy meal




1 onion, chopped

1 medium size tomato

1 cup sausage or ham

chopped (optional)

½ zucchini (optional)

1-2 chopped peppers (any color or combination of green, yellow or red)

½ teaspoon paprika powder

salt, pepper

3 eggs.

Sautee onion on a little oil, (if using sausage or ham add now.) Once onion is soft, add zucchini (if using), later add peppers and cook until soft. Once soft add tomato, salt, pepper and paprika, cover and cook little longer. In a cup, mix eggs and add them to the vegetable mixture and let cook for few minutes until firm.

Serve immediately with bread on the side. (3 servings)
