Potato Soup (Bramborová Polévka)



1 small onion

3 potatoes peeled and diced

¼ cup parsnip root

1 cup celery

1 leek

1 carrot

1 clove crushed garlic

2 tsp caraway seed

Salt and pepper to taste

1½ cup dry mushrooms

¼ cup oil


1 tbsp marjoram 


Dice all vegetables. Saute onion in a large pot. Add potatoes, parsnip, celery, leek, carrot, caraway seed and garlic. Cover with water, add salt, pepper and cook.


Add mushrooms.


To prepare roux by adding oil to a pan and then mix in enough flour to form a paste. Sauté these together until the flour starts to turn golden color. Let the roux cool first, then add it to the soup mixture.


Cook until all ingredients are soft. Adjust the taste with additional salt if needed. Few minutes before serving, add marjoram. Serve with heavy, dark type of bread (not sweetened).
