Yeast Dough for Buchty (Buchty) and Kolache (Koláče)


3 cups vondra flour

1 cup warm milk

1/3 cup sugar

1/3 cup melted butter

2 egg yolks

1/3 teaspoon salt

Little lemon peel grated

1 vanilla sugar or 1 tsp. vanilla extract

2 tsp dried yeast

 

Dissolve yeast in milk with a little sugar. Once yeast becomes frothy, add to the rest of the ingredients. Mix and knead dough well into a soft ball.

 

Let rise for about 1-2 hours until double size.

To make buchty:
Cut out balls of dough, flatten, place filling in the middle, pinch edges together to make a ball. Place each ball, pinched side down in a well oiled pan with raised edges. Place balls next to each other until run out of space or dough. Brush each ball with more oil or melted butter and let rise again. Bake at 350 deg F. 20-30 minutes until crust golden brown.

Take out of oven, leave in the pan for a few minutes then invert onto a large plate.

Serve!

 

To make kolacky or kolache:
You can make small kolachky or large kolach. To make small kolachky, use golf ball sized pieces of dough for large kolach, use a large piece of dough.

 

Spread out the dough, using fingers or roll out about ½ inch flat. Place filling on top evenly up to about ½ inch from the edges and sprinkle with crumble, (may brush some egg wash over the edges for color). Let rise a little again and bake at 350 deg F for about 20 minutes.
